Fisan Ham
The Fisan 100% Acorn-Fed Ibérico Ham is a whole pata negra piece crafted in Guijuelo (Salamanca), where the unique microclimate favours a slow and balanced curing process. It comes from 100% Ibérico pigs raised free-range in the dehesa and fed exclusively on acorns during the montanera season, resulting in fat marbling rich in oleic acid and a deep, complex flavour. Prolonged curing with a special ‘Alta Gastronomía’ selection: a minimum of 42 months, with some pieces exceeding 50 months in natural cellars.
History and tradition of Fisan
Since 1920, FISAN has been a family project dedicated to the art of Ibérico ham, when D. Fidel Sánchez transformed the tradition of domestic slaughter into professional production in Campillo de Salvatierra, Salamanca. Over the years, his son Florencio Sánchez consolidated the brand in cities such as Madrid and Barcelona and expanded its facilities with its own slaughterhouse, cutting rooms and curing cellars. FISAN was one of the founding members of the Guijuelo PDO Regulatory Council, helping to raise the quality standards of Ibérico products. Today the company is in its third generation, led by Eva, Javier and Florencio Sánchez, who combine innovation and tradition to maintain excellence from the dehesa to the table.

Why choose Fisan ham
Choosing a FISAN ham means trusting in over 100 years of tradition and excellence in Guijuelo, home to some of the most renowned Ibérico products in the world. Each piece comes from 100% Ibérico pigs raised free-range in the dehesas of Salamanca and Extremadura, fed on acorns during the montanera. The result is an intense, balanced flavour, an elegant aroma and a silky texture that distinguish FISAN as one of the great references in Spanish haute cuisine, ideal both for enjoying at home and for giving as a special gourmet gift.
Purity of the Ibérico breed
FISAN ham comes from 100% Ibérico pigs raised free-range in the dehesas of the southwest of the Iberian Peninsula. This genetic purity ensures meat with excellent marbling rich in oleic acid, providing juiciness, smoothness and a unique flavour with complex nuances.
Slow and natural curing
Each FISAN ham undergoes an artisanal curing process in the natural cellars of Guijuelo that can exceed 40 months. This patient ageing, influenced by the microclimate of the Salamanca mountains, allows deep aromas and an elegant flavour with notes of nuts and herbs from the dehesa to develop.
Prestige and worldwide recognition
FISAN is regarded as a symbol of gastronomic excellence, present in more than 40 countries and on the menus of prestigious Michelin-starred restaurants. Choosing a FISAN ham is not only acquiring a gourmet product, but enjoying a cultural and family legacy that combines tradition, innovation and more than a century of history.
